I had the pleasure of going to Mardi Gras last year and it was incredible. The energy that permeated New Orleans was unmatched by anything I’ve seen before. I was fortunate to be hosted by several friends that are from NOLA and they ensured we had an authentic experience. One of my favorite parts was eating shrimp po’boys-nothing can match those Cajun spices. I did some research and picked elements from 2 recipes to create a little taste of the south. The shrimp came out perfectly crispy and the sauce had just the right amount of kick to it. The coleslaw was sweet and made for a great side dish. Laissez bon temps rouler!
