I’m not really a big salad person. I’ve found that unless the greens are doused in dressing it makes for a rather bland meal. But salads don’t have to be boring, predictable greens. I’ve recently discovered how delicious radishes are. They add a peppery bite to any meal. I’ve never heard of watermelon radishes but upon cutting into them I was instantly drawn to their beautiful coloring. These tie-dye pin wheels made for a refreshing salad with jicama and cilantro lime dressing from Blue Apron. It made for the ideal side to my favorite meal: chicken tacos.
